Oscietra de la Sombra. An exclusive offering from an incredible farm in Spain. Named for its alluring dark hue. Rich, savory, nutty, with a cacao finish.
Siberian. The caviar that made me fall in love with Altima. Coming from the Republic of Georgia, its briny, robust, and has a long finish.
Beluga Hybrid. Described by our COO Alayna Steinman as the 'wagyu of caviar', this dreamy caviar comes from Bulgaria. Earthy, buttery, nutty.
Platinum. A crowd favorite, especially with blanc de blancs champagne. Sourced from Moldova, its buttery, delicate, and refined, with a hint of minerality on the finish.
Amber. Beautifully rich, nutty, and creamy, this stunner is coming from Israel.
Kaluga Hybrid. High on culinary versatility, and the caviar that you see the most often in restaurants. It's mild, creamy, and has a nice salinity.
Persicus. Rare and delicious, this caviar is sourced from Azerbaijan. A profile reminiscent of hazelnuts, it is delicate with a medium pop.
Marigold Oscietra. Hand selected and named by our chef partner, Austin Waiter, to embody the spirit of Marigold Club in Houston. Coming from China, this fine expression of Gold Oscietra is rich, early, and has an almond butter finish.
Albino Sterlet. A showstopper in flavor and color, this caviar is sourced from Ukraine from albino sturgeon. It has a subtle nuttiness with notes of sea grass.
Trout Roe. For when you want to ball on a budget. Large pearls, with a soft snap, they are mild with notes of the ocean breeze. My daughter loves it on deviled eggs.
